My first vegan dish in the Bri Meets World series was brought to us by Nina from Lemons and Luggage. This dish was very easy to make… do not let the time required scare you away. Just remember that you need to soak the beans in water the night before cooking this soup.
Oh my goodness! This was my first recipe for the “Bri Meets World” series, and oh my gosh it was so good! The recipe was sent in by Maja from Away With Maja. I am so glad she showed me this fun dish. When I first read over the recipe, I was pretty nervous to try to make it. I have never made dough before, so making it from scratch as well as having to shape it into a boat?! I was nervous. I visited Ireland 3 years ago (How insane is that?!), and I have been waiting 3 long years to write a blog post about one of my favorite things about my trip to Ireland… Women’s Christmas! I just keep missing the deadline to post it, so we have had to wait all this time to learn about it.
Of course, when visiting a country you have to go to the most popular cities, but they are also normally the most touristy and do not give you an authentic view of the country. That is why I am so excited to be writing this Travel Diary entry from a bus that is on the way to Ouarzazate. Marrakech was amazing, I am so happy I was able to spend time there, but I am also super excited to see the rest of the country.
I still can’t believe that I am in Africa, and I have already finished my first 3 days in Morocco! For days 1-3 of this trip, we stayed in Marrakech… and I still don’t know the correct spelling! I have seen it spelled both Marrakesh and Marrakech, so if you have insight into this please let me know. Anywho, these first few days have been magical to say the least.
